Servings
Ingredients
1 tbsp cooking sherry
2 tsp low sodium soy sauce
0.5 tbsp vegetable oil
1 medium shallots , sliced (about 1/4 cup)
2 tsp fresh ginger root , minced, peeled
12 oz Lettuce, bibb, fresh, leaf, medium (about 4 heads)
0.25 tsp salt
0.25 tsp sugar
0.12 tsp black pepper

Directions
1 Wash and fully dry lettuce.
2 In small bowl, whisk sherry and soy sauce. Set aside.
3 In wok or large skillet, heat oil over high heat; making sure it does not smoke. Add shallot and ginger, sauté quickly until shallot is tender, about 1 minute. Add lettuce and cook, stirring constantly, until lettuce is wilted, 1 or 2 minutes.
4 Add sherry mixture. Season with salt, sugar, and pepper. Cook 30 seconds until lettuce is soft. Make sure lettuce stays bright green. Serve right away.
