1 Place oil in a heavy saucepan and bring to a frying temperature. 2 Add celery, peppers, and zucchini to pan, and then cook and stir over moderate heat for 5 minutes. 3 Wash the tomatoes, remove stems, and cut into wedges before adding to vegetable mixture. 4 Cook and stir until tomatoes are hot. 5 Stir together broth, cornstarch, and seasonings until smooth. Then add to vegetables and cook for about 2 minutes. 6 Serve hot!
