Ingredients
1 tbsp vegetable oil
1 cup fresh chopped celery , thinly
1 chopped green bell peppers , julienne-cut
1 medium zucchini , cut into 1/4-inch slices
4 fresh tomatoes , at room temperature
1 cup fat free reduced sodium chicken broth
1 tbsp cornstarch
0.25 tsp salt
0.5 tsp ground ginger
0.25 tsp black pepper


Directions
1 Place oil in a heavy saucepan and bring to a frying temperature.
2 Add celery, peppers, and zucchini to pan, and then cook and stir over moderate heat for 5 minutes.
3 Wash the tomatoes, remove stems, and cut into wedges before adding to vegetable mixture.
4 Cook and stir until tomatoes are hot.
5 Stir together broth, cornstarch, and seasonings until smooth. Then add to vegetables and cook for about 2 minutes.
6 Serve hot!
