Ingredients
12 medium oysters , on the half shell, drained
2 tbsp rice vinegar
2 tbsp mirin (sweet rice wine)
12 cilantro sprigs
2 tbsp fresh ginger root , thinly sliced, peeled
1 red hot chile peppers , halved lengthwise, seeded, and cut into 12 thin strips
0.25 tsp peppercorns, green, ground


Directions
1 Place 6 oysters on the half shell in a vegetable steamer.
2 In small bowl, whisk vinegar and mirin. Spoon 1 teaspoon over each oyster; top each with 1 cilantro sprig, 1 slice of ginger, and 1 strip of chile.
3 Sprinkle half peppercorns over oysters.
4 Place lid on steamer and cook 2 minutes or until edges curl. Continue with remaining oysters and ingredients. Serve warm.
