Ingredients
2 lb extra lean top round steak , boneless, cut 3/4 inch thick
1 large onion , cut into wedges
2 medium garlic cloves , minced
0.5 tsp ground thyme , crushed
0.12 tsp black pepper
0.25 cup fat free unsalted beef broth (or water)
2 medium red bell peppers , cut into 1/2-inch strips (and/or yellow sweet peppers)
0.5 cup fat free half and half
3 tbsp dijon mustard
2 tbsp cornstarch


Directions
1 Remove excess fat from meat. Cut meat to fit into a 3 1/2- or 4-quart slow cooker. Place meat, onion, garlic in cooker. Sprinkle with thyme and black pepper. Pour beef broth over mixture in cooker.
2 Cover and cook on low-heat setting for 6 to 8 hours or on high-heat setting for 3 to 4 hours.
3 Remove meat and onion to a serving platter, reserving cooking liquid. Cover meat with foil to keep warm.
4 If using low-heat setting, turn to high-heat setting. Stir sweet pepper strips into cooking liquid.
5 Combine in a small bowl half-and-half, mustard and cornstarch. Stir into mixture in cooker. Cover and cook for 15 minutes more or until thickened.
6 Spoon pepper strips and some of the sauce over meat and onion; serve with remaining sauce.
Additional Information
Serve with a green salad and vinaigrette to round out the meal.
