Ingredients
1 tbsp black pepper , cracked
8 oz extra lean beef tenderloin (2 (4oz) steaks)
1 cooking spray
0.25 cup brandy
0.5 cup fat free unsalted beef broth
0.25 tsp salt
0.25 tsp sugar
3 tbsp fat free sour cream


Directions
1 Season both sides of the steak with the black pepper.
2 Spray a nonstick skillet with the cooking spray and heat over medium-high. Cook the steaks for 5 minutes then turn over and cook for an additional 5 minutes. Put on two separate plates and keep warm.
3 Pour the brandy into the skillet and simmer for about 30 seconds. Mix in the beef broth, salt, and sugar. Simmer for about 4 to 5 minutes or until half of the liquid has evaporated.
4 Turn the heat off and add the sour cream. Pour the mixture on top of the steaks.
Additional Information
Try omitting the salt and using Splenda to reduce calories and sodium.
