1 Coat a large skillet with the cooking spray, and cook the peppers and onion 5 minutes. Remove from the pan; keep warm. 2 Sprinkle 2 tablespoons cheese over each of 3 tortillas. Top each evenly with roast beef and peppers. Sprinkle the remaining cheese evenly over the top of the mixture and top each with another tortilla. 3 In another pan, cook each quesadilla in the skillet over medium-high heat, 1 minute per side, or until the cheese is melted. Cut into 12 pieces.
