2 tbsp black pepper
1 lb Beef, top sirloin steak, raw
2 tsp Margarine, 80% fat, unsalted , divided
1 canola cooking spray
1 medium shallots , finely chopped
0.5 cup fat free unsalted beef broth
0.25 cup brandy (Cognac)
0.25 tsp salt
1 cup fresh watercress, chopped (optional)


Directions
1 Rub cracked pepper over all of steak.
2 Heat 1 teaspoon margarine over medium high heat in a large skillet coated with cooking spray.
3 Cook steaks in skillet for 3 minutes per side (should be browned). Remove the steaks from the skillet, cover, and keep warm.
4 Reduce heat below skillet to medium and saute the shallots until tender.
5 Add the beef broth and Cognac. Bring to a boil, scraping the sides of the pan.
6 Add the salt and remaining margarine. Cook for 5 more minutes.
7 Pour sauce over the steaks and serve over watercress (optional).
