Ingredients
1 tbsp Margarine, 80% fat, unsalted
1 Onion, sweet, fresh , sliced and separated into rings (such as Vidalia)
2 lb Squash, summer, fresh, medium, FDA , rinsed and thinly sliced
0.75 tsp salt
0.5 tsp white pepper (or black pepper)
2 tbsp fresh oregano , chopped (and/or basil)


Directions
1 In a large deep skillet over medium heat melt the margarine.
2 Add the onion and cook until tender, about 5 minutes.
3 Stir in the squash, salt, and pepper. Cook until the squash is tender, about 5 minutes more. Stir in the oregano and/or basil.
