1 Using a sharp vegetable peeler, slice the squash lengthwise into thin ribbons. 2 Place the ribbons in a large microwave-safe dish with a lid. Cook on HIGH for 1 to 2 minutes, until wilted. 3 In a glass measuring cup, mix margarine, garlic, and lemon juice. Microwave on HIGH for 20 seconds, until margarine is melted. 4 Drizzle margarine mixture over squash ribbons and add salt (if using), pepper, and nutmeg. Toss well and serve.
