Servings
Ingredients
1.5 cup cold water , boiling
1 cup cornmeal
0.25 tsp salt
2 tbsp margarine
1 cup whole milk
1 raw large eggs , separated
1 tsp low sodium baking powder
1 cooking spray


Directions
1 Preheat oven to 375°F.
2 Lightly coat 1 1/2-quart baking dish with cooking spray.
3 In small saucepan, bring water to boil.
4 Place cornmeal in large bowl.
5 Add boiling water, stir until smooth.
6 Add salt and margarine, blend. Set aside for 10 minutes or until cool.
7 Add milk, baking powder and egg yolk to cooled ingredients.
8 In a separate mixing bowl, beat egg white with hand mixer until stiff peaks form.
9 Fold egg white into other ingredients, pour batter into prepared baking dish.
10 Bake for 45 minutes.
11 Cut bread into 6 slices and serve immediately.
