10 oz frozen chopped spinach , thawed
0.67 cup sliced water chestnuts , drained
3 fresh green onions
2 medium garlic cloves
0.5 cup sour cream
0.5 cup plain yogurt, whole milk
0.5 tsp Mustard, spicy brown
1 pinch salt (optional)
1 pinch black pepper (optional)


Directions
1 Spread spinach on clean dish towel. Place second dish towel on top. Roll and wring to absorb excess water.
2 In food processor fitted with chopping blade, finely chop water chestnuts, green onions, and garlic.
3 Add spinach. Process for 10 seconds.
4 Add sour cream, yogurt, mustard, salt, and pepper. Process for 30 seconds, or until smooth.
5 Transfer to serving bowl. Cover and refrigerate for at least 1 hour before serving.
