Ingredients
8 oz fresh spinach leaves , washed, patted dry, and ends trimmed
8 oz soft tofu , cut into chunks
3 tbsp fresh lime juice
1 tbsp safflower oil
2 medium garlic cloves , minced
1 tsp ground oregano
1 pinch ground nutmeg
1 pinch black pepper


Directions
1 In blender or food processor, combine all ingredients. Pulse until well mixed.
2 Cover and refrigerate for at least 10 minutes before serving.
Additional Information
Serve with raw vegetables or low carb, whole grain chips.
