Ingredients
24 oz fresh spinach leaves , rinsed and patted dry, stems removed (3 cups)
4 fresh mushrooms (med) , sliced thin
3 piece red onion slices , thin
0.25 cup shredded mozzarella cheese
1.5 tsp balsamic vinegar
1 tsp olive oil
1 tsp cold water
1 pinch salt and pepper


Directions
1 In large bowl, place spinach leaves, mushrooms, onion, and cheese.
2 In separate bowl, whisk vinegar, olive oil, water, salt, and pepper. Drizzle over spinach mixture.
3 Microwave salad for 1 minute on medium setting, then serve.
