Ingredients
2 10" flour tortilla
2 tbsp fat free sour cream
10 oz frozen chopped spinach , thawed and squeezed dry
1 large tomato , chopped
1 pinch salt and pepper , to taste
0.5 cup low fat shredded monterey jack cheese
0.25 cup fresh chopped green onion , thinly sliced


Directions
1 Preheat the oven to 450 degrees.
2 Place the tortillas on a baking sheet coated with nonstick cooking spray, bake for 3 minutes, or until golden brown.
3 Remove from the oven, and reduce the temperature to 350 degrees.
4 Spread the sour cream evenly over the tortillas.
5 Top each with the spinach, tomato, salt, and pepper to taste.
6 Sprinkle evenly with the Monterey Jack cheese, and bake for 5 minutes more, or until the cheese is melted.
7 Sprinkle with the green onion. Cut each tortilla into four slices, and serve immediately.
