Servings
Ingredients
2 tbsp orange juice
2 tbsp walnut oil
2 tbsp white wine vinegar
0.5 tsp grated orange peel
1 pinch salt and pepper (to taste)
4 cup Greens, Belgian endive, fresh , separated into leaves (4 heads)
0.5 fresh spinach, 10 oz. package , thick stems removed (equal to 5 ounces)
2 Oranges, navels, fresh, 2 7/8" , peeled and cut into bite size pieces
0.5 cup Cranberries, dried
0.25 cup chopped walnuts , toasted


Directions
1 In a small bowl, make the dressing by whisking together the orange juice, walnut oil, vinegar, orange zest and salt and pepper.
2 Place the endive, spinach, oranges, cranberries and walnuts in a large bowl, add in the dressing, and gently toss to coat.
Additional Information
You can replace the spinach with arugula or radicchio and the oranges with strawberries.
