Ingredients
4 Cucumber, fresh, medium , peeled and diced
6 scallions , chopped
0.25 cup peanuts
1 cup chopped parsley , packed
1 cup fresh cilantro , packed
1 whole jalapeno pepper , seeded
0.25 cup rice vinegar
1 tbsp canola oil
1.5 tsp curry powder
1 tsp sugar
1 medium garlic cloves , minced
1 pinch salt and pepper , to taste


Directions
1 Mix the first 3 ingredients in a large bowl.
2 Place the parsley, cilantro, and jalapeno pepper to a blender and process until finely chopped. Add to the cucumber mixture and mix well.
3 In a small bowl, whisk together the remaining ingredients and pour over cucumber mixture, toss well and serve.
Additional Information
Wear rubber gloves when handling jalapeno peppers; touching the seeds can burn your skin.
