Ingredients
6 potatoes, fresh, medium
2 tsp vegetable oil
1.5 tsp chili powder
3 pinch hot pepper sauce , several drops
6 oz Canadian bacon , chopped
0.67 cup chopped tomato , finely chopped
2 tbsp fresh chopped green onion , finely chopped
1 cup low fat cheddar cheese, shredded


Directions
1 Preheat oven to 425 degrees.
2 Scrub potatoes clean under cold water with a vegetable brush and pierce with a fork.
3 Bake until tender, about 45 minutes, set aside to cool.
4 When potatoes are cool, cut lengthwise into 4 wedges (cut in half first, then cut each half in half again).
5 Using a spoon, remove the white of the potato (saving the removed portions for another recipe), leaving the skins with very little potato.
6 Mix the oil, chili powder, and hot pepper sauce in a small bowl. Brush on to the insides of each potato wedge with a pastry brush.
7 Place potato wedges onto a baking sheet and top each evenly with the bacon, tomato, and green onion. Sprinkle on cheddar cheese and bake until cheese melts, about 10 minutes.

You can serve these tasty treats with fat free sour cream.
