1 Preheat oven to 425 degrees. 2 Scrub potatoes clean under cold water with a vegetable brush and pierce with a fork. 3 Bake until tender, about 45 minutes, set aside to cool. 4 When potatoes are cool, cut lengthwise into 4 wedges (cut in half first, then cut each half in half again). 5 Using a spoon, remove the white of the potato (saving the removed portions for another recipe), leaving the skins with very little potato. 6 Mix the oil, chili powder, and hot pepper sauce in a small bowl. Brush on to the insides of each potato wedge with a pastry brush. 7 Place potato wedges onto a baking sheet and top each evenly with the bacon, tomato, and green onion. Sprinkle on cheddar cheese and bake until cheese melts, about 10 minutes.
