1 Heat 1/2 teaspoon of the oil over medium heat in a large pan, and saute the bell peppers until softened, about 2 to 3 minutes. 2 Stir in the onions and cook for another minute. 3 Remove pan from heat and stir in the cilantro and jalapeno peppers. Place in a small bowl. Set aside pan to cook tortillas after. 4 Place 4 of the tortillas on a cutting board and top each with 1 tablespoon of cheese, 1/4 of the pepper mixture, 1/2 teaspoon of cheese, then cover each one with remaining tortillas. 5 Brush the remaining teaspoon of oil on the top of each tortilla with a pastry brush. 6 Cook tortillas in large pan, 2 at a time over medium heat, until lightly browned on both sides, about 2 to 3 minutes each side. 7 Repeat with remaining 2 tortillas, cut each tortilla into quarters, and serve immediately.
