1 In shallow baking dish, combine lime juice, soy sauce, jerk seasoning, oil, mustard, thyme, scallions or onions, ginger, poultry seasoning, ground black pepper, and ground red pepper. 2 Add chicken, turning to coat completely. Cover and refrigerate for at least 4 hours, or up to 2 days.
3 Coat grill rack with cooking spray and preheat grill to medium.
4 Grill chicken, turning once, until it registers 160°F on an instant read thermometer and the juices run clear, approximately 5 to 8 minutes per side.
