Servings
Ingredients
7 oz chipotle peppers in adobo sauce
0.5 cup fresh chopped onion , finely chopped
0.5 cup fresh cilantro , coarsely chopped
0.25 cup Oats, rolled, old fashioned
0.25 cup bread crumbs
0.25 cup no-salt tomato sauce
2 tsp chopped parsley
0.75 tsp salt
0.5 tsp ground cumin
0.5 tsp oregano leaves , dried
0.25 tsp dried basil
0.25 tsp black pepper
2 cup garlic cloves, chopped , minced
2 egg whites
1 lb ground turkey
1 lb ground turkey , breast
1 cooking spray
0.25 cup no-salt tomato sauce
1 tbsp Ketchup
0.5 tsp hot pepper sauce

Directions
1 Preheat oven to 350 degrees F.
2 Slice 1 chili into small pieces and mix together with 1 teaspoon adobo sauce (save the rest of the chilies and sauce for another use), onion, and remaining ingredients, up to and including ground turkey breast. Arrange mixture in a 9 by 5 inch cooking spray coated loaf pan, forming to make a loaf. Place in oven and bake for 30 minutes.
3 Meanwhile, mix together tomato sauce, ketchup, and hot sauce. Coat loaf top with sauce and continue baking for an additional 30 minutes (a thermometer stuck in the middle should read 160 degrees F). Remove from oven and let rest 10 minutes before cutting into 6 even pieces.
Additional Information
Although ground turkey and turkey breast keep this dish lean, feel free to use lean beef as a substitute.
