Ingredients
1 tbsp peanut oil
3 medium garlic cloves , minced
3 red hot chile peppers , minced
3 boneless skinless chicken breasts , halved, and cut into 2-inch pieces
2 tbsp low sodium chicken broth
1 small red bell peppers , sliced thin
1 small green bell peppers , sliced thin
1 cup fresh chopped celery , sliced
0.5 cup chopped scallions , sliced
1 tbsp light soy sauce


Directions
1 In wok, heat oil over medium-high. Add garlic and chili peppers and sauté 30 seconds.
2 Add chicken and sauté 5 to 8 minutes; chicken should no longer be translucent. Move chicken up to edges of wok.
3 Add broth and peppers and sauté 4 minutes. Add celery and scallions and sauté 2 more minutes. Move chicken back to center and mix with vegetables. Add soy sauce, place lid on wok and let simmer 2 minutes. Serve hot.
