Ingredients
1 cooking spray
2 tsp olive oil
16 oz boneless skinless chicken breasts (4 4-ounce halves)
1 chopped green bell peppers , coarsely chopped
14.25 oz canned stewed tomatoes , undrained and chopped
2 tsp hot pepper sauce
0.33 cup fresh cilantro , chopped and divided
0.5 tsp ground thyme
1 pinch hot pepper sauce
1 pinch fresh thyme


Directions
1 Spray a nonstick skillet with the cooking spray. Heat the oil over medium-high heat.
2 Cook the chicken for 2 minutes then turn over and cook for 2 minutes longer.
3 Mix in the pepper, tomatoes, hot sauce, 1/4 cup cilantro, and dried thyme. Bring just to a boil then decrease the heat. Simmer, covered, for 5 minutes. Then simmer, uncovered, for 10 minutes.
4 Add the rest of the cilantro. Garnish with thyme sprigs. Serve with extra hot sauce on the side.
Additional Information
Serve over a bed of rice.
