Ingredients
1 tbsp vegetable oil
1 medium onions , chopped
1 medium garlic cloves , crushed
4 boneless skinless chicken breasts , halves
3 small apples , peeled, cored, and sliced
3 tbsp dried currants
1.5 oz pine nuts (3 tbsp, optional)
0.33 cup Juice, apple
1.5 tsp ground thyme
1.5 tsp chopped parsley
1 whole jalapeno pepper , seeded and chopped (optional)
1 pinch salt and pepper (to taste)


Directions
1 Heat oil in a large heavy skillet over medium heat.
2 Saute onions and garlic until tender.
3 Move the onions off to the side, and brown chicken breasts 4 minutes on each side.
4 Top chicken with apples, currants and pine nuts.
5 Pour in the apple juice, then season with thyme, parsley, jalapeno, salt and pepper.
6 Reduce heat. Cover and simmer for 15 to 20 minutes, or until apples are cooked and chicken is no longer pink.
