1 Combine cumin and coriander. 2 Wash and dry lamb. Season lamb on both sides with salt and pepper. Rub spice mixture onto surface of lamb. 3 Preheat oven to 325 degrees. 4 Heat oil in an oven safe frying pan over medium high heat. Cook lamb chops, flipping one time 2 to 3 minutes per side or until browned. 5 Move pan to oven and roast 7 to 8 minutes or until a meat thermometer reads at least 125 degrees.
