Ingredients
1.5 tbsp cumin seeds , toasted and ground
1.5 tbsp ground coriander , seeds, toasted
8 lean lamb loin chops , fat trimmed (about 4 ounces each, 1 to 1 1/4 inches thick )
1 pinch salt and pepper
1 tbsp olive oil


Directions
1 Combine cumin and coriander.
2 Wash and dry lamb. Season lamb on both sides with salt and pepper. Rub spice mixture onto surface of lamb.
3 Preheat oven to 325 degrees.
4 Heat oil in an oven safe frying pan over medium high heat. Cook lamb chops, flipping one time 2 to 3 minutes per side or until browned.
5 Move pan to oven and roast 7 to 8 minutes or until a meat thermometer reads at least 125 degrees.
Additional Information
Serve these with couscous flavored with grated lemon peel and cooked carrots.
