1 Place one cinnamon stick, cardamom, and cloves in 100% cotton muslin bag or cheesecloth tied with a string. 2 In large saucepan, add spice sack, chopped apples, and red wine. 3 Stew apples, spices, and wine over low heat until they become soft and fall apart at slightest pressure. 4 Stir in vanilla. 5 Allow apples to cool to room temperature. 6 In large bowl, whip cream with electric mixer at high speed until stiff peaks form. 7 Remove spice sack. Place stewed apples in food processor, blender, or food mill, and blend until applesauce becomes smooth. 8 Divide between serving dishes. Top with 1/4 cup whipped cream, sprinkle with cinnamon, and garnish with cinnamon stick.
