Ingredients
1.75 lb cooked baby red potatoes , peeled and cut into 1-inch cubes (about 5 cups)
1 cup soy milk (or oat milk)
2 tbsp canola oil (or corn oil)
1.25 tsp salt


Directions
1 Steam potatoes over simmering water until tender (about 15 minutes).
2 Transfer potatoes to medium bowl. Add soy milk or oat milk, oil and salt, and mash until smooth.
3 Serve immediately.
