Ingredients
2 lb round tip roast, lean (1 1/2 to 2 inches thick)
0.25 cup low sodium soy sauce
0.25 cup fresh cilantro , chopped
2 tbsp oregano leaves , chopped (or 2 tsp dried)
3 medium garlic cloves , minced
0.5 oz black pepper
1 cilantro sprigs


Directions
1 Preheat grill to medium-high.
2 Slice off and throw away any excess fat from the beef. Cut 1 inch long and 1/2 inch deep pockets into top and bottom of roast, 1 inch apart from each other.
3 Whisk together soy sauce, cilantro, oregano, garlic, and pepper.
4 Arrange roast in a shallow baking dish and pour soy sauce marinade into slits and over top.
5 Lay roast on the grill and shut lid. Cook 20 to 25 minutes, flipping once or until preferred degree of doneness; a meat thermometer should read at least 125 degrees F.
6 Move meat to a cutting board and let stand 5 minutes. Slice diagonally across the grain into thin pieces. Top with cilantro sprigs.
