Ingredients
1 lb cheese filled tortellini (or spiral pasta)
1 pint fresh cherry tomatoes , halves
15 oz canned black beans , drained and rinsed
1 cup Corn, white, sweet, kernels, frozen , defrosted
0.25 cup balsamic vinegar
2 tbsp fresh lime juice
0.5 cup fresh chopped red onion
0.5 tsp minced garlic
0.5 oz honey
0.25 cup fresh cilantro , chopped
0.25 cup olive oil
1 pinch salt and pepper , to taste


Directions
1 Prepare the tortellini according to the package directions, omitting any oil and salt. Then, rinse in cold water and set aside to cool, and in a large bowl, mix the tortellini, tomatoes, black beans, and corn while tossing gently.
2 Use a food processor to mix the balsamic vinegar, lime juice, red onion, garlic, honey, and cilantro, and pulse to mix.
3 Add the olive oil gradually through the feed tube with the motor running, and season with the salt and pepper.
4 Pour the dressing over the salad, and toss, cover, and chill for 30 minutes before serving.
