Ingredients
1.5 tbsp olive oil
1 large onion , chopped
1 tsp cumin seeds
3 cup fat free reduced sodium chicken broth
0.75 lb boneless skinless chicken breasts , cut into 1/2-inch cubes
1.5 cup Beans, black, canned , rinsed and drained
1 cup Corn, white, sweet, kernels, frozen
1 medium red bell peppers , seeded and diced
0.25 cup Sauce, barbecue
3 tbsp fresh cilantro , chopped


Directions
1 Heat oil in a large pot over medium heat. Add in the onion, and cook until it starts to brown, about 8 minutes. Stir in the cumin and sauté for 1 minute. Add in the broth and bring to a simmer. Add in chicken and bring to a simmer. Cook until chicken is thoroughly cooked, about 3 minutes. Add in the remaining ingredients and heat through, about 3-4 minutes; serve.

PLEASE NOTE: This recipe contains canned beans. The nutrition facts given will be slightly inaccurate, because the analysis includes the salted water in which the beans are canned. When you drain and rinse these beans, you reduce the sodium content by about 40 percent.
