Ingredients
16 oz strip steak, lean , 2 8-ounce steaks cut 1 inch thick (New York)
0.25 cup fresh lime juice
2 medium garlic cloves , minced
0.5 tbsp chili powder , red New Mexican style
0.5 tsp black pepper
0.5 tsp ground cumin
2 tsp olive oil
4 scallions , cleaned, white part and at least 3 inches green


Directions
1 Trim off fat from the steaks. Brush with lime juice and rub in garlic, ground chile, ground pepper, and ground cumin. Let stand at room temperature for 30 minutes.
2 Light a grill or preheat the broiler. Brush both sides of the steak with olive oil.
3 Grill to desired doneness, about 4 to 5 minutes per side for medium-rare. While the steaks are grilling, also grill the scallions, turning often, until scallions are wilted and nicely browned.
4 To serve, slice the steaks into thin slices against the grain. Arrange slices on 4 heated dinner plates and top each portion with a grilled scallion.

This recipe goes well with brown rice and fresh garden vegetables.
