Ingredients
3 boneless skinless chicken breasts , halved
0.5 cup fresh lime juice
1 tbsp olive oil
4 oz yellow onion , chopped
0.5 cup chopped red bell peppers
2 large garlic cloves , minced
2 tbsp fresh cilantro , minced
1 tbsp fresh oregano , minced (or 1 tsp dried)
1 medium limes , cut into wedges


Directions
1 Whisk together lime juice, olive oil, onions, peppers, garlic, cilantro, and oregano.
2 Submerge the chicken breasts in the liquid and cover. Place in refrigerator and let stand for 2 to 3 hours or up to two days.
3 When ready to cook, take chicken out of liquid using tongs. Arrange the chicken on a baking sheet and place under preheated broiler or lay chicken on a heated grill. Cook the chicken 7 to 8 minutes on each side, make sure chicken is cooked through.
4 Scatter lime wedges around chicken before serving.
Additional Information
If you don't want to heat the oven or grill, follow directions for marinating and then microwave chicken for about 14 minutes.
