Ingredients
6 serving turkey breast tenderloin, raw , cut into medallions
0.25 cup vegetable oil
0.25 cup fresh lime juice
1 tsp salt
1 tsp chili powder
0.5 tsp garlic powder
2 Squash, summer, all types, fresh, medium , cut into 3/4-inch chunks
2 medium onions , cut into 3/4-inch chunks
2 chopped green bell peppers , cut into 3/4-inch chunks


Directions
1 In a large bowl, combine oil, lime juice, salt, chili powder, and garlic powder.
2 Toss vegetables in oil mixture, stir to coat. Transfer vegetables to separate large bowl.
3 Add turkey medallions to oil mixture, stir to coat.
4 Thread turkey and vegetables alternately onto skewers, leaving a small space between pieces.
5 Grill over hot coals about 20 minutes or until turkey is no longer pink in center. Turn occasionally to prevent burning.
