Servings
Ingredients
1 cup long grain brown rice
1 tbsp Butter, unsalted
1 medium shallots , minced
2 fresh green onions , chopped
1 medium carrots , sliced
0.5 cup snow peas , slices
0.5 cup fresh mushroom slices
2 tbsp white wine (dry)
1.5 cup vegetable broth (or chicken broth)
1 pinch salt and pepper
2 tbsp sesame seeds , toasted


Directions
1 Let the rice soak in a bowl of water for 2 hours, rinse, and then drain.
2 Melt the butter in a nonstick saucepan. Saute the shallot until it becomes soft. Mix in the onions, carrot, snow peas, and mushrooms. Saute for 3 minutes.
3 Stir in the rice and cook for 2 minutes.
4 Add wine and broth. Bring to a boil then decrease heat and simmer, covered, for 25 minutes.
5 Turn heat off and fluff. Sprinkle with salt, pepper, and sesame seeds.
