1 In large saucepan, melt butter over medium, add onion and sauté until tender, about 5 minutes. Add snow peas and lettuce, sauté 3 to 4 minutes longer. 2 Add broth, tarragon, and mint, heat to boiling.
3 Reduce heat and simmer, covered, 15 minutes or until snow peas are tender. Remove from heat and cool 5 minutes. 4 In blender or food processor, pour soup and purée until smooth. Strain, and discard solids. Season to taste with salt and white pepper. 5 Serve warm, or chilled. Garnish each bowl of soup with tablespoon of yogurt and fresh mint.
