0.5 cup fresh chopped green onion
0.5 cup fresh chopped onion (yellow onion)
1 tbsp butter ,
1 lb snow peas , trimmed
4 cup Lettuce, romaine, fresh, shredded , coarsely chopped
4 cup low sodium vegetable broth
0.5 tsp ground tarragon
0.25 oz fresh mint , ~1 tsp (divided)
1 pinch salt and pepper , to taste (optional)
6 tbsp plain yogurt, whole milk


Directions
1 In large saucepan, melt butter over medium, add onion and sauté until tender, about 5 minutes. Add snow peas and lettuce, sauté 3 to 4 minutes longer.
2 Add broth, tarragon, and mint, heat to boiling.
3 Reduce heat and simmer, covered, 15 minutes or until snow peas are tender. Remove from heat and cool 5 minutes.
4 In blender or food processor, pour soup and purée until smooth. Strain, and discard solids. Season to taste with salt and white pepper.
5 Serve warm, or chilled. Garnish each bowl of soup with tablespoon of yogurt and fresh mint.
