Ingredients
24 oz red snapper , 4 6-oz fillets (or other firm white fish)
1 cooking spray
16 oz parsley sprigs
1 cup fresh chopped onion
0.5 cup clam juice
2 tbsp fresh lime juice
0.75 tsp salt
3 medium garlic cloves


Directions
1 Preheat oven to 400 degrees F.
2 Lay snapper on a cooking spray coated baking sheet.
3 Using a blender or food processor, puree parsley, onion, clam and lime juice, salt, and garlic until smooth. Spoon sauce over fish.
4 Bake 18 minutes or until fish is flaky. Serve extra sauce overtop fish.
Additional Information
Any light, white fish can be used with this sauce.
