1 Place the whole ears of corn in an ice cooler and pour the beer over the top. Next, dump the ice out over the ears of corn and place the lid on the cooler, and let sit at least 8 hours, or overnight. 2 When you are ready to cook the corn, preheat your smoker to 250 degrees F. Place corn in the smoker and close the lid. 3 Let cook for 1 to 2 hours, turning every 20 minutes or so. When the corn is cooked, the kernels should give easily under pressure. To eat, simply peel back the husks and use them for a handle.
Additional Information
When buying the corn, make sure that is still completely covered by the husk. The outer layer is crucial in the smoking process.
