Ingredients
8 oz cooked chicken breast, diced (smoked)
16 oz frozen artichokes hearts , quartered (drained and cooked)
2 cup fresh cherry tomatoes , halved (12 tomatoes)
1 cup chopped yellow bell peppers , diced
0.5 cup fresh chopped red onion , diced
0.5 cup fresh basil , slivered
2 tbsp fresh lemon juice
1 tbsp olive oil
0.25 tsp black pepper
0.25 tsp dry mustard
1 pinch salt
8 Greens, radicchio, fresh


Directions
1 Mix together chicken, artichoke hearts, cherry tomatoes, yellow pepper, onion, and basil.
2 In a separate bowl whisk together the lemon juice, oil, black pepper, mustard, and salt with a wire whisk.
3 Pour lemon juice mixture over the chicken mixture and coat thoroughly.
4 Cover and refrigerate.
5 Line a platter with radicchio leaves and top with chicken mixture.
