4 eggs , at room temperature
0.33 cup whole milk
1 pinch black pepper , freshly ground
1 tbsp fresh chives , thinly sliced
1 tbsp fresh dill weed , finely chopped
3.5 oz smoked salmon , chopped
1 cup fresh baby spinach , chopped
2 piece seven grain bread, thick slices (optional)


Directions
1 In a small bowl, begin by whisking together the milk, eggs, pepper, chives, and dill.
2 Next, heat a large, non-stick frying pan over medium heat and then add the egg mixture.
3 Cook for about 30 second, or until the eggs start to set around the edges.
4 Using a spatula, fold the eggs over gently, and then repeat the folding process until the eggs are just cooked. When finished, the eggs will still be quite soft.
5 When finished, the eggs will still be quite soft.
6 Once the eggs have cooked, stir in the salmon and spinach until the salmon is heated through and the spinach is wilted.
7 Serve by itself or on top of your choice of bread (optional).
Additional Information
If using bread, try to choose grainier, healthier bread such as pumpernickel, sour dough, or whole wheat.
