Ingredients
4 eggs , at room temperature
0.33 cup whole milk
1 pinch black pepper , freshly ground
1 tbsp fresh chives , thinly sliced
1 tbsp fresh dill weed , finely chopped
3.5 oz smoked salmon , chopped
1 cup fresh baby spinach , chopped
2 piece seven grain bread, thick slices (optional)
1 cooking spray


Directions
1 In small bowl, whisk milk, eggs, pepper, chives, and dill.
2 Coat large skillet with cooking spray and heat over medium.
3 Add egg mixture. Cook about 30 second, or until eggs start to set around edges.
4 Using spatula, fold eggs over gently, and repeat folding process until eggs are cooked.
5 When finished, the eggs will still be quite soft.
6 Add salmon and spinach, and cook until salmon is heated through and the spinach is wilted.
7 Serve on top of your choice of bread (optional).
