28 oz whole canned unsalted tomatoes , crushed, undrained
1 cup fresh chopped celery
1 chopped green bell peppers (3/4 cup)
0.5 cup fresh chopped onion
2 tbsp quick cooking tapioca
1.5 tsp fresh basil , snipped (or 1/2 tsp dried basil, crushed)
0.5 tsp salt (optional)
0.25 tsp black pepper
0.25 tsp hot pepper sauce
1 medium garlic cloves , minced
2 lb country style pork ribs (boneless)


Directions
1 In 3-1/2 or 4 quart slow cooker, combine undrained tomatoes, celery, sweet pepper, onion, tapioca, dried basil, salt (if desired), black pepper, hot pepper sauce, and garlic. Add ribs, stirring to coat ribs with tomato mixture.
2 Cover and cook on low heat setting for 8 to 10 hours or on high heat setting for 4 to 5 hours.
3 Remove ribs to serving platter.
4 Skim fat from remaing sauce. If using fresh basil, stir into sauce. Serve by spooning sauce over meat and passing remaining sauce in gravy boat.
