Ingredients
6 oz smoked turkey sausage , halved lengthwise and cut into 1/2-inch slices (cooked)
15 oz Soybeans, black, unsalted, canned , rinsed and drained
14.5 oz Tomatoes, stewed, unsalted, canned , undrained and cut up
1 cup chopped red bell peppers (1 medium; or yellow pepper)
1 medium onions , cut into thin wedges
0.25 cup red wine (dry)
3 medium garlic cloves , minced
0.5 oz herbes de provence , crushed
0.5 tsp salt
3 lb boneless skinless chicken breasts (and thighs and drumsticks)
1 pinch salt and pepper


Directions
1 In a 4 1/2- to 6-quart slow cooker combine sausage, beans, undrained tomatoes, celery, sweet pepper, onion, wine, garlic, herbes de Provence, and the 1/2 teaspoon salt. Stir gently to mix. Place chicken on top. Sprinkle chicken lightly with additional salt and black pepper.
2 Cover and cook on low-heat setting for 8 to 10 hours or on high-heat setting for 4 to 5 hours.
3 Remove chicken from cooker. Spoon bean mixture into shallow serving bowls; top with chicken.
Additional Information
If you like, substitute one 15-ounce can black beans, rinsed and drained, for the black soy beans and omit the 1/2 teaspoon salt. PLEASE NOTE: This recipe contains canned beans. The nutrition facts given will be slightly inaccurate, because the analysis includes the salted water in which the beans are canned. When you drain and rinse these beans, you reduce the sodium content by about 40 percent.
