1 tbsp olive oil
1 cooking spray
2 fresh leeks , sliced
3 medium garlic cloves , peeled and minced
5 oz extra lean ground beef (5% fat)
5 oz ground turkey
4 cup frozen broccoli florets (or any other low-carb vegetable combination)
4 oz salsa , mild, sugar-free
4 cup no-salt tomato sauce
2 tbsp tomato paste
4 oz canned mushroom slices, drained
1 tsp chili powder (optional)
1 tsp ground cumin (optional)


Directions
1 In a large pot, prepare the leeks and garlic the Enlitened way (see below). Add the ground meats and more cooking spray if necessary, and brown until the meat is no longer pink and begins to crumble.
2 Add broccoli or vegetable combination and cook over medium heat approximately 10 minutes.
3 Add rest of ingredients and stir to mix well.
4 Cover and simmer 15 minutes, stirring frequently to enable the flavors to blend. Remove from heat.
Additional Information
Tip: Heat 2 tablespoons olive oil together with the cooking spray in a large non-stick skillet over medium heat for a few seconds. Add the leeks and onions; stir and lower heat. Cook until the leeks and onions start to brown, stirring occasionally. Add garlic and a few drops of water, the mixture will start to brown. Cook another few minutes, scraping the bottom of the pan so that nothing sticks.
