Servings
Ingredients
4 Pork, chop, top loin, raw , all visible fat discarded (about 5 oz each)
0.5 tsp ground thyme
0.25 tsp garlic salt
1 cooking spray
2 cup chopped apples , finely chopped (Granny Smith preferred)
4 Plums, dried, pitted, with orange essence , finely chopped
1 tbsp packed dark brown sugar
0.5 tsp grated orange peel
2 tbsp Juice, orange, fresh
0.25 tsp ground cinnamon


Directions
1 Combine the salsa ingredients in a medium bowl, and gently toss thoroughly to blend. Set aside.
2 Sprinkle the thyme and garlic salt on both sides of the pork chops.
3 Over medium heat, heat a large nonstick skillet, and remove from the heat and lightly spray with vegetable oil spray (being careful not to spray near a gas flame).
4 Return the skillet to the heat and cook the meat for 5 minutes on each side, or until no longer pink in the center.
5 Serve the pork chops with the cinnamon-apple salsa.
