1 Place carrots and 1/4 cup of water into a microwave safe dish with a cover. Place in microwave and cook on high until tender, about 6 minutes.
2 In the meantime, heat oil over medium high heat in a large skillet. Stir in the apple, curry, and garlic. Cook for 1 minute, stirring continuously.
3 Add in pork and salt and cook until pork has just a slight pink color in the middle, about 6-8 minutes. Add in the apple cider and the cooked carrots (along with any liquid) into the pan and bring to a boil, continue cooking for 1 minute and serve.
