Ingredients
1 dried poblano peppers (up to 2 dried chiles, to taste)
4 tbsp olive oil
3 medium garlic cloves , finely chopped
16 large raw shrimp , in the shell
1 pinch salt and pepper (to taste)


Directions
1 Begin by splitting the chilies lengthways and then discard the seeds. Next, heat the oil in a large frying pan and then stir-fry the garlic with the chili for roughly 1 minute, or until the garlic begins to turn brown.
2 Add the shrimp and then continue to stir-fry for 3 to 4 minutes, making sure to coat the shrimp well with the flavored oils.
3 Remove the pan from the heat, and then divide the shrimp among 4 dishes equally. Spoon over the flavored oils and then serve immediately.
Additional Information
With a low-carb or multi-grain bread on the side, these shrimp make a great appetizer before any meal or when entertaining guests.
