1 Sprinkle both sides of the meat with the thyme and pepper. 2 Heat a large nonstick skillet over medium-high heat. Remove from the heat and lightly spray with olive oil spray. 3 Return the skillet to the heat and cook the meat for 4 to 6 minutes on each side or until desired. Then transfer the meat to a platter and cover it with aluminum foil to keep warm. 4 In the same skillet, while stirring occasionally, cook the mushrooms and onion over medium-high heat for 1 to 2 minutes, or until the onion is tender-crisp. 5 Mix in the broth, brandy (if desired), mustard, and the Worcestershire sauce. Cook for 5 to 6 minutes, or until the mushrooms are tender and the liquid has reduced by half, stirring occasionally. 6 Spoon the mushroom mixture over the steaks.
