Ingredients
1 cooking spray
24 oz swordfish fillets (4 6-ounce steaks)
0.5 tsp salt
0.5 tsp black pepper
1 tbsp sliced almonds
2 tsp minced garlic
1 oz seedless raisins (2 tbsp)
2 tbsp Juice, orange, fresh
1 oz pitted calamata olives , chopped (1 1/2-2 tbsp)
1 oz roasted red peppers with brine , chopped (1 1/2-2 tbsp)


Directions
1 Heat a cooking spray coated frying pan over medium-high heat. Season fish with salt and pepper and place in hot pan. Cook fish 5 minutes per side or until preferred degree of doneness. Take fish out of pan and set aside in a warm place.
2 Spray pan again with cooking spray. Sauté garlic for 30 seconds. Mix in raisins, orange juice, olives, and pepper and cook 1 minute or until all the liquid absorbs. Spoon salsa over fish.
Additional Information
Tuna can be substituted for the swordfish. Serve this with orzo mixed with fresh basil and toasted pine nuts.
