1 Clean, peel, and cut eggplant into 1/2" thick slices. Sprinkle with pepper. Set aside. 2 In small saucepan over low heat, combine tomato sauce, tomato, garlic, parsley, pepper, and salt. Heat through and simmer 10 minutes. 3 Coat grill with cooking spray, preheat 5 minutes at medium. 4 Place eggplant slices on grill in single layer and cook until tender, 8 -9 minutes. 5 Remove from grill, top with tomato sauce mixture and cheese.
