Ingredients
2 tbsp wasabi powder
1 cup light mayonnaise
2 tbsp fresh lemon juice
1 oz fresh mint , chopped
1 pinch salt
0.25 oz fresh mint , rinsed
1.5 lb cooked shrimp , shelled, rinsed, and drained (31 to 40 shrimp per pound)


Directions
1 Whisk together wasabi powder with 2 tablespoons water until smooth. Using a food processor or blender, puree mayonnaise, lemon juice, mint, and three-quarters of the wasbai mixture until smooth. Taste and mix in salt and more of the wasabi mixture depending on how spicy you like it. Spoon mixture into a bowl and use as a dipping sauce for shrimp. Garnish with a fresh mint sprig.
Additional Information
Wasabi powder can be found in the spice or Asian section of your supermarket or in an Asian grocery store. If making wasabi mayo up to 1 day ahead, cover and chill.
