Directions
1 Place the jalapeno, onion, red pepper, and cilantro in a food processor, and pulse until chopped.
2 Peel the mangoes and chop, adding the jalapeno mixture, and 2 tablespoons lime juice, and transfer to a bowl.
3 Heat the oil in a large skillet over medium heat, and stir-fry the shrimp and garlic until the shrimp is almost done, for about 5 minutes.
4 Add the remaining 2 tablespoons lime juice and tequila, and cook for about 5 minutes, or until the shrimp are done.
5 Add the salt and pepper, and stir the shrimp into the salsa mixture, and serve.
Additional Information
A wonderful combination over rice or as a salsa.
