Ingredients
1 lb raw medium shrimp , peeled and deveined
0.5 cup plain yogurt, whole milk
0.25 cup fresh chopped red onion , minced
2 tbsp pimentos , chopped
1 tbsp tomato paste
2 tsp Horseradish, minced, canned (in vinegar)
0.25 tsp black pepper
2 cup Lettuce, iceberg
1 medium limes , cut into 4 wedges


Directions
1 Bring a pot of water to a boil and cook the shrimp until opaque, about 3 minutes. Drain, rinse under cold water, and drain again. Pat dry with paper towels.
2 In small bowl, whisk yogurt, onion, pimientos, tomato paste, horseradish, and pepper.
3 Place 1/2 cup of lettuce each serving plate. Evenly divide shrimp and place on top of lettuce. Top each with 1/4 cup of sauce. Garnish with lime wedge.
