1 Bring a pot of water to a boil and cook the shrimp until opaque, about 3 minutes. Drain, rinse under cold water, and drain again. Pat dry with paper towels. 2 In small bowl, whisk yogurt, onion, pimientos, tomato paste, horseradish, and pepper. 3 Place 1/2 cup of lettuce each serving plate. Evenly divide shrimp and place on top of lettuce. Top each with 1/4 cup of sauce. Garnish with lime wedge.
